Just made a simple mushroom omelet for breakfast. I found out that champignon or button mushrooms taste a lot better than white mushroom or shimeji mushroom. I use a little bit of butter with oil, not all butter. It didn’t taste dairy at all. Mushrooms go well sauteed in butter I think. I didn’t use the topping as I didn’t have enoki mushrooms at hand.

Hi Lidya- just came over from Accentuate. I like most any mushrooms in all kinds of things. Sounds good!
