Cooking Risotto

Yesterday I cooked a risotto recipe from the cookbook Risotto, by Janey Stacey and Kathryn Hawkins with a good result. The risotto ingredients are chicken stock, smoked chicken, button mushrooms, mango, almonds, and thyme.

I can’t get arborio rice, so I used ordinary long grain rice. It won’t give same result as using arborio rice. The rice won’t be al dente and creamy and long grain rice needs a lot more liquid.

For next time I will use more smoked chicken, riper mango, more almonds to give more crunch, and less thyme. I might not need use thyme at all and replace it with fresh spring onion as it taste kind of oriental anyway.
